These were amazing beef tacos that I made! First, I started by sautéing the lean ground beef in a pan with some olive oil. Then, I seasoned with salt, pepper, paprika, and garlic powder. Once the beef was no longer red/pink in colour, I removed it from the pan and toasted the corn tortillas in the meat juices. Once, they were fully coated and slightly crisp, I removed the tortillas from the pan and placed them onto a plate. I smeared refried black beans on the tortillas as a base, which provide a good source of fiber, protein, and iron, with a half-cup serving typically containing 110–150 calories, with 7–8 grams of protein and 5–7 grams of fiber. Then, I added the ground beef on top, which provides about 24 grams of protein, and is a good source of iron and B vitamins. I topped the tacos with sliced avocados, iceberg lettuce, and cherry tomatoes. These vegetables provide saturated fats, fiber, iron, and vitamins. The last thing I added was sauerkraut. I personally love sauerkraut because of the probiotic benefits for gut health, essential vitamins like C and K, and other important nutrients such as fiber, iron, and magnesium. Its fermented nature can improve nutrient absorption, support the immune system, and potentially have anti-inflammatory effects! Overall, this is a very tasty and satiating meal that is relatively easy and quick to make.
